note: I made this in 9 x 13 pan and when it was done baking just left it and served it from the pan. Easy that way! This is so so good!
2 cups sugar 1 3/4 cups flour 3/4 cup unsweetened baking cocoa (like Hershey or Nestle, in the baking aisle) 1 1/2 teaspoons baking powder 1 1/2 teaspoons baking soda 1 teaspoon salt 2 eggs 1 cup milk 1/2 cup vegetable oil 2 teaspoons vanilla extract 3/4 cup boiling water
Set oven and preheat to 350 degrees.
Grease and flour a 9 x 13 pan OR two 9 inch cake rounds (do not use 8 inch rounds, it will overflow)
In large mixing bowl, combine sugar, flour, cocoa, baking powder, baking soda, salt and stir together.
Add eggs, milk, oil and vanilla. Mix medium speed for 2 minutes.
Add the boiling water, and STIR BY HAND until it is well mixed. The batter will be thin.
Pour into prepared pan(s).
Bake:
9 x 13 pan - 35 to 40 minutes 9 inch round pans - 30 to 35 minutes
Cool in pan(s) for 10 minutes then remove onto wire cooling racks.
Cool completely and frost with whatever your heart desires!
