A breakfast entree!
1/3 cup all purpose flour 1/3 cup sugar 1/4 teaspoon salt 1/4 teaspoon cinnamon 4 eggs 1 teaspoon vanilla extract 2/3 cup milk
Combine all ingredients in a bowl and whisk until smooth.
Heat skillet on low to medium heat (honestly, most recipes call for a medium to high heat, but I use a well seasoned cast iron skillet with just a tad bit of bacon grease, and on a medium to high heat, french toast burns pretty quickly. So I use low to medium heat. It's variable with what sort of skillet you use, etc. You can tweak it to your liking)
Use slices of thick sliced day old bread. Submerge in the batter for 5 seconds or so, remove and let excess batter drip off. Cook in lightly greased preheated skillet until nice golden brown on each side. You probably know the drill.
Serve with butter, maple syrup, powdered sugar or fruit preserves, or all of the above, but that would make them pretty darned fattening, and they're fattening enough with just one topping!
