Note that the heat settings on different crock pots is different. I have a large oval GE crock pot, and the low setting on it is higher than the low setting on others and this cooks in mine in about 3 hours. Pretty much when you can stick a meat fork through the noodles, if they are nice and tender, it's done. When I make this, it pans out to 8 generous sized portions. I usually freeze half of it for another meal or 2 for us. We have reheated it as long as 2 months later and it was still very nice.
Crock Pot Lasagna
1 lb. lean ground beef (can do 1/2 lb ground beef and 1/2 pound Italian sausage)
1 small onion, chopped fine
4 garlic cloves, chopped
28 ounce tomato sauce (or two 15 ounce cans)
6 ounce tomato paste
1 cup water
1/2 teaspoon oregano
1/4 teaspoon basil
1/4 cup sugar
1/4 teaspoon salt
16 ounce cottage cheese
1/2 cup parmessan cheese
1 lb. mozerlla cheese
12 ounce box lasagna noodles, uncooked
1. Brown ground beef with onions and garlic. Drain off any fat.
2. add tomato sauce, tomato paste, water, oregano basil, sugar and
salt to the meat. Heat till it's all warm.
3. Put layer of meat sauce into bottom of crock pot.
4. Put two layers of UNCOOKED lasagna noodles over the sauce,
breaking as needed to make them fit (we criss-crossed the 2 layers
each time, do it how you like)
5. On top of the layer put a layer of cottage cheese (okay it's hard
to spread, we just kinda dotted a light layer of cottage cheese on the
noodles).
6. Sprinkle a layer of parmessan cheese.
7. Add a layer of mozerella. (Remember, you have a whole pound to
work with! Lay it on!)
8. Spoon a layer of meat sauce over the cheeses.
9. Continue layering noodles, cheeses, sauce, till all ingredients
are used, ending with parmessan and mozerella on the top.
10. Set crock pot on LOW and cook for 4-5 hours. Don't try to rush
it by cooking on medium or high. It WILL burn! Resist the urge to
lift the lid to check or smell it. If you can't resist that urge, if
you take the lid off be careful not to let any condensation on the
underside of the lid to pour into the lasagna.
