one 8 to 10 inch zucchini
1 cup flour 1 teaspoon seasoned salt 1/2 teaspoon black pepper
2 eggs 2 tablespoons milk
1 cup finely crushed saltines 1 teaspoon seasoned salt 1/2 teaspoon black pepper
1. combine first 3 ingredients in a plastic bag and shake to blend well.
2. whisk eggs and milk till well mixed
3. combine crushed saltines, seasoned salt and black pepper in a separate plastic bag. Shake to blend well.
4. cut zucchini into strips that are about 3 inches long by 1/2 inch. DO NOT PEEL. Place into the back with the flour and shake to coat well.
5. coat floured zucchini pieces with egg mixture and place in the bag with the crackers. Shake bag to coat all the pieces.
6. deep fry in 375 degree oil until golden brown. Don't overload the fryer and don't overcook the zucchini.
7. let cool a bit and eat! They're yummilicious!
