Until I made brown rice cooked this way, I hate, Hate, HATED it! It was too sticky, too gooey for me. It's absolutely fantastic using this cooking method.
1 1/2 cups uncooked brown rice 2 1/2 cups water 1 Tablespoon butter 1 teaspoon salt
preheat oven to 350 degrees
Pour uncooked brown rice into an 8x8 casserole dish
Microwave water for 2 minutes, or until boiling. Add butter and salt. Microwave for an additional 30 seconds to melt the butter. Stir to dissolve the salt. Pour over the rice in the casserole dish. Cover tightly with foil. Bake 1 hour, without checking it. Remove from oven, fluff the rice with a fork and serve hot.
Any leftover rice can be spooned into sandwich bags in single serving portions while still warm and tucked away in the freezer. Add a teaspoon of water to portion and reheat in microwave.
