1 yellow cake mix, baked according to pkg directions in a 9x13 pan and completely cooled
1 twenty ounce can crushed pineapple (juice and all) + 1 cup sugar, heated in small saucepan long enough for sugar to dissolve, let completely cool
3 bananas, sliced into pieces
1 large box vanilla INSTANT pudding, made to pkg directions and chilled in the fridge for about 10 minutes
1 eight ounce tub of Cool Whip
coconut and chopped walnuts (optional)
Spoon the pineapple mixture, juice and all over the cooled cake (the cake will absorb the juice). Add layer of sliced bananas. Spread vanilla pudding over the bananas. Spread the Cool Whip over the pudding.
Garnish with coconut and chopped walnuts if you so desire.
Cover with plastic wrap and store in the fridge!
Note: I did use coconut and nuts on top of the one I made, simply because it makes covering the cake with plastic wrap easier (so the plastic wrap wouldn't stick). If you're not a fan of coconut then just scatter some nuts on top.
This really filled up my pyrex 9x13!

After having made this once (we loved it!) it's time I made a notation regarding this recipe.
Unless you can get this entire cake eaten up within a day, the cake might have some issues. After a day of making this, the bananas I used were beginning to blacken and turning to goo. Also, the cake was very soggy from the juice on the pineapple.
So, I made the cake again with the following changes.
1. Drained most the juice off the crushed pineapple.
2. Used half a cuip of sugar instead of 1 cup (just because. I'm diabetic and don't need the extra sugar. Not to mention that cutting the sugar in half made no difference in the sweetness of cake).
3. I completely omitted the bananas. Instead of putting the coconut on top, I put the coconut where the banana layer formerly was.
4. Instead of vanilla pudding, I used banana flavored pudding (banana problem solved!)
Delicious! And hopefully it will hold up better after a couple days.
