2 Cups Bisquick baking mix 1/3 to 1/2 cup sugar (1/2 cup if you want them a little sweeter) 1 egg 2 tablespoons oil 2/3 cup milk 1 cup blueberries (fresh or frozen) Preheat oven to 400 degrees. Grease 12 muffin tins or line with cupcake papers. Combine Bisquick, sugar, egg, oil and milk in a large bowl. Stir with a spoon until mixture is well combined but don't beat out all the lumps. Fold blueberries gently into the batter. Fill muffin tins 2/3 full. Bake for 13 to 15 minutes till tops are golden brown. Makes one dozen.
