4 to 6 pieces frozen boneless chicken breasts 1 jar (16 ounces) salsa (pick a good brand, your choice on the spiciness) 1 can (16 ounces) whole kernel corn, drained 1 can (16 ounces) black beans, drained 8 ounce pkg. cream cheese
1. Place frozen breast pieces in bottom of crock pot.
2. Pour jar of salsa over chicken pieces.
3. Top with corn and black beans.
4. Cook on low for 5 or 6 hours or until meat is tender.
5. When meat is tender, lay the pkg of cream cheese on top, replace lid and cook for an additional 30 minutes.
Notes:
You can serve the chicken as is. When the meat is done, I usually pull it apart and set it back on the salsa mixture and then add the cream cheese. Then we have them with flour tortillas like a soft chicken taco, creamy style.
