I use the bread machine to facilitate this.
Dough:
1 1/2 Cups warm water
2 Tablespoons butter or margarine
1/2 Cup honey
1 Tablespoon sugar
1 Tablespoon cocoa powder
2 teaspoons instant coffee granules
1 teaspoon salt
2 Cups bread flour
2 1/4 Cups whole wheat flour
2 1/4 teaspoons yeast
Crust Treatment:
1 egg, lightly beaten
Corn meal
Add the dough ingredients in the order listed into your bread machine pan. Run on the dough cycle. Here is where it is a little tricky to explain. The dough cycle on my bread machine mixes and kneads the dough, then stops and brings the dough through its first rise before signaling that it is ready. If your machine doesn't bring the dough through the first rise, leave the dough in the bread machine until the dough has doubled in size. In my case, when the machine says it is done, I leave it in the machine for about 20 additional minutes, as wheat dough tends to take longer to rise to double size.
When the dough is double size, punch it down and remove it from the pan on a floured surface. This is a soft dough and a bit sticky. Divide the dough into 4 pieces. Form each of the 4 pieces into a loaf and place into greased mini loaf pans. Cover with a clean dish towel and place in a non drafty area and let rise until dough doubles in size, about 1 to 1 1/2 hours.
When dough is double in size, preheat oven to 350 degrees.
While the oven is heating up, lightly brush the tops of the loaves with a lightly beaten egg, then dust the tops with corn meal.
Bake loaves for 20 minutes. When done, cool in pans for a few minutes then remove them to a wire rack to finish cooling.
Some notes:
My mini loaf pans are half the size of a typical one pound loaf pan. This make 4 nice sized mini loaves. If you want smaller loaves, the dough could be divided into 8 pieces and dropped into the half pound mini loaves. This would make them a personal sized loaf.
You can make this bread ahead of time and then before serving, wrap in foil and place in a 400 degree oven for about 10 minutes and serve warm, spread with honey butter.
In a pinch, you can substitute the honey with an equal amount of molasses. The flavor changes slightly, but is still very nice.
