7 russet potatoes, peeled and sliced in 1/4 inch slices 1 small onion, chopped 3 Tablespoons butter 3 Tablespoons flour 1 teaspoon salt 1/4 teaspoon paprika 2 cups milk 2 cups shredded cheddar cheese
preheat oven to 400 degrees
Place sliced potatoes and chopped onion into a large buttered casserole dish.
In large saucepan, melt butter. Combine flour, salt and paprika and add to the melted butter and cook for a few seconds, mashing it into the butter till it's smooth.
Add milk, a bit at a time, whisking it as you go to remove lumps.
Once all milk is added heat it, stirring constantly, until milk is very hot but not boiling.
Dump the cheese in all at once, and stir until it all melts. Pour this sauce over the potatoes and onions, and move the potatoes around with a fork so the sauce gets mixed in well around them.
Bake COVERED (use aluminum foil if casserole dish doesn't have a heat safe lid) for 1 hour and 15 minutes. Remove cover and bake for an additional 15 minutes. Remove from the oven and let sit for 15 minutes before serving.
