I love a little Kahlua in my coffee when I have a cup in the evenings. But the stuff costs around $28 per liter bottle. This is my solution, and it's a great one! I use Bowman's Vodka. Just under $13 for a 1.75 liter bottle that will make this recipe 3 times. Yes, it's cheap, but it's great for this recipe. Use a BIG saucepan. When the coffee is added to this it does foam up and it WILL boil over, sticky sticky sticky mess, I swear. Been there, done that. You can double the recipe, just make sure you're using a big pot, like a large dutch oven (pictured above is a double batch) 4 cups water 2 3/4 cups sugar 1/4 cup instant coffee (use a good brand, I like Nescafe Classico) 2 cups vodka 1 Tablespoon vanilla extract 1. In a large saucepan bring water to a boil. Stir in sugar and coffee and stir until all is dissolved. Bring this carefully back up to a rolling boil then turn it down to a low boil and let simmer until the volume is reduced by half (2 to 3 hours). 2. Remove from heat and allow to cool completely. 3. Add vodka and vanilla, mix it in well. 4. Bottle it up! This will be good now, but in a week or two it will be even better.
