This is the strawberry pie glaze my mom ALWAYS used, though it originated with her Aunt Hazel.
Don't bother with the pre-made pie glazes from the deli or produce departments that taste as though they are chock full of preservatives. This glaze is truly the best.
Makes 2 pies.
6 Tablespoons cornstarch 1/2 teaspoon salt 2 cups sugar 3 1/4 cups water 1 large box strawberry jello
In a large saucepan combine the cornstarch, salt, sugar and water. Stir until the cornstarch dissolves. Cook on medium heat until thick and bubbly, stirring frequently so it doesn't scorch.
Remove from the heat and add jello, stirring until jello is completely dissolved.
Cool mixture to room temperature. Pour over fresh strawberries in baked pie shells.
Chill pies until they are cold. Glaze will have a soft set.
Serve with whipped cream.
