I believe this recipe originally came from the back of a box of Quaker Oats, but it's the one we've always used and it's a keeper.
1 cup butter 1/2 cup sugar 1 cup brown sugar 2 eggs 1 teaspoon vanilla extract 1 1/2 cups flour 1 teaspoon baking soda 1 teaspoon cinnamon 1/2 teaspoon salt 3 cups oats 1 cup raisins (optional)
In a large mixing bowl, cream together butter and sugars. Add eggs and vanilla, mix well.
In separate bowl combine flour, soda, cinnamon, salt and oats. Add to the creamed mixture and mix together well. Fold in raisins (optional)
preheat oven to 350 degrees.
Drop dough onto greased baking sheets (or sheets lined with parchment paper)
Bake for 8 to 10 minutes. Cool for a few minutes on the pan and then transfer to cooling racks.
