1/2 cup shortening 1/2 cup butter or margarine 3/4 cup powdered sugar 2 tablespoons milk 1 1/2 teaspoon vanilla extract 1 3/4 cups all-purpose flour 1 cup quick oats 1/2 cup finely chopped pecans 1/4 teaspoon salt
Powdered sugar
Preheat oven 325 degrees.
With eleftric hand mixer cream together shortening, butter and 3/4 cup powdered sugar. Add milk and vanilla, beat with mixer until wel mixed. Add flour and oats and keep mixing with electric mixer. Actually use the mixer for it all. Add pecans and salt and mix until all combined.
Shape rounded teaspoonfuls into balls. Bake on increased cookie sheets (use parchment paper!) For 15 to 18 minutes or until bottoms are golden brown.
Roll in powdered sugar a couple minutes after taking out of the oven. Then cool completely. The first time in the powdered sugar doesn't give it a very nice coat of sugar on the cookies. But it does sort of create a "glue" on the balls and the second coat will be a nice and pretty coating on them.
Once completely cool, roll again in powdered sugar.
Note: the original recipe called for a cup of butter flavored Crisco. But I never buy that stuff and just use half shortening and half butter.
