This recipe was given to me by my sister's friend Anna. I do not know where she got it from, but it is seriously addictive!
8 cups popped popcorn 4 cups rice Chex cereal 2 cups mini pretzels 1 cup nuts of choice (optional) 1 cup packed light brown sugar 1/2 cup butter or margarin 1/4 cup light corn syrup 1 teaspoon vanilla 1/2 teaspoon baking soda
Preheat oven 300 degrees F.
Combine popcorn, Chex cereal, pretzels and nuts in a large roasting pan.
In a 2 quart saucepan combine brown sugar, butter and corn syrup. Cook over medium heat with bamboo spoon or high heat resistant silicon spatula until mixture comes to a boil over the entire surface. Lower heat to medium-low. Cook without stirring for 5 minutes (mixture should continue to bubble gently over the surface). Remove saucepan from heat after the 5 minutes. Quickly stir in baking soda and vanilla, mixing well. Mixture will get kind of foamy.
Pour over the popcorn mixture and stir until well coated. Bake for 30 minutes, stirring after 15 minutes. Once it has baked 30 minutes remove from oven and give a final stir. Transfer the popcorn to large piece of parchment or wax paper. Cool completely, breaking into clusters as it cools.
