I'm going to call this an entree, as you don't really need anything else to make a meal of it. It's that good.
3 cups instant rice, uncooked 1 medium onion, chopped 3 stalks celery, chopped 1 can cream of mushroom soup, undiluted 1/4 cup milk 12 ounces, more or less, cheese wiz, eyeball it, it's not rocket science, use 16 ounces if you want, go nuts, use a store brand! 1 teaspoon salt 1 pound bag frozen cut broccoli
preheat oven 400 degrees grease or butter 9x13 pan
Prepare instant rice according to package instructions, set aside.
In small sauce pan, cook the onion and celery in a bit of butter or oil until tender. Place into a large mixing bowl.
Add cream of mushroom soup and 1/4 cup milk to the celery and onion.
Heat cheese wiz until it's just warm enough to pour and mix into the onion, celery and soup mix.
Add the instant rice and salt, stir until well blended.
Fold in frozen cut broccoli and combine with other stuff.
Pour into prepared pan, bake on center rack in oven for about 30 minutes, or until it begins to brown on top.
