I've posted Wendy's recipe for a triple batch of the icing she uses on these cookies. It's a good one. 1 cup butter, softened but not melted 3/4 cup sugar 1 egg 2 Tablespoons milk 1 1/2 teaspoons vanilla extract 3 cups self-rising flour 1. Cream together butter and sugar until smooth 2. Add egg, milk and vanilla and beat till smooth. 3. Gradually add self-rising flour until all is mixed in. It will be a stiff dough. 4. Divide dough into 2 balls and wrap well with plastic wrap. Chill in the fridge for 30 minutes. 5. After chilling, take one of the balls and knead it a little and form back into a ball. On lightly floured surface (use the self-rising stuff) roll the dough out to about 1/4 inch thick. Cut into cookies and place on UNGREASED cookie sheets. They can be set pretty close together on the pans, but leave some space between them. They don't run out as they're baking, they just raise up a bit. 6. Bake in a 400 degree oven for 5 to 8 minutes. When you can see them with light golden edges they're done, take them out. Let them sit on the pans for a few minutes and then remove them to cooling racks. These are easy to burn so watch them closely! Wendy's IcingAbout 2 lb powdered sugar (maybe tick more) 3 egg whites 1 1/2 tsp vanilla 3/4 stick butter 1/2 cup shortening And water tiny bits at a time Mix slow and then on high speed to fluff egg whites until creamy and fluffy.
