1/2 cup butter, softened but not melted 3/4 cup chunky peanut butter (or 1/2 cup creamy peanut butter) 1/2 cup sugar 1/2 cup brown sugar 1 egg 1 teaspoon vanilla extract 1 3/4 cups self-rising flour 1 cup of sugar, reserved in separate bowl for rolling dough balls in
Preheat oven to 350 degrees
1. Cream together butter, peanut butter, sugar and brown sugar till smooth.
2. Add egg and vanilla and mix well till smooth
3. Gradually add self-rising flour until all is mixed in. It will be a stiff dough.
4. Form dough into 1 inch balls and roll into sugar.
5. Place sugar'd dough balls onto UNGREASED cookie sheet. Smash down with a fork, criss-cross pattern (traditional, huh?)
6. Bake for 8 to 10 minutes or until the edges of the cookies are golden brown. Cool on sheet for a few minutes then remove to wire cooling racks and let cool completely.
Note: you can get creative sort of. Sometimes for the holidays i'll dip the bottom half of the dough balls into regular sugar then dip the top halves into the red and green sugars to make them a bit more festive.
