3 boneless chicken breast halves 1/4 cup olive oil 1 1/2 cups fresh bread crumbs 1/2 cup finely chopped almonds 1/4 cup grated parmesan cheese 1/2 teaspoon garlic powder 1 tablespoon parsley (2 tablespoons if using fresh parsley) 1/2 teaspoon dried thyme leaves 1 teaspoon salt 1/4 teaspoon black pepper
Preheat oven to 400 degrees.
Slice breasts in half horizontally (making 2 thin pieces per breast).
Pour oil into a shallow dish, such as a pie tin.
In a bowl, combine the dry ingredients and mix well.
Swipe both sides of the chicken pieces through the oil and press into the bread crumb mixture, coating both sides. Place on greased or sprayed baking sheet.
Bake 20 to 25 minutes until golden brown and juices run clear when poked with a fork. Remove from oven.
