NOTE: When making cinnamon or any mint flavor, I take it all outside to add the flavor oil in. BE EXTREMELY CAREFUL as the steam that comes from the pan when you stir it in can burn you!! I also pour it outside and let the pan sit outside till it's cool, as it is usually cold outside when I make this stuff, and it just cools faster that way.
3 cups sugar 1 cup PLUS 2 tablespoons water 1 cup light corn syrup 1/2 teaspoon food coloring 1 dram flavored oil (I use 2 drams when making cinnamon)
Combine sugar, water and corn syrup in a large saucepan. Heat, stirring until sugar is dissolved. Take the spoon out and don't stir anymore!
Boil till mixture reaches 260 degrees. Add food coloring but don't stir it in, the bubbling action will distribute the color.
Continue to boil until mixture is 310 degrees. Remove from heat. When the mixture stops bubbling, add flavor oil and mix very well.
Pour onto a VERY lightly greased pan that has an edge on it and let sit until it's cool. Break into pieces, mix with a little confectioner's sugar if desired and store in an air tight container.
