1/2 cup butter 3/4 cup brown sugar 2 eggs 2 1/3 cups mashed bananas (use very ripe ones - will need 5 or 6 of them) 2 cups flour 1 teaspoon baking soda 1/4 teaspoon salt
Preheat oven to 350 degrees. Lightly grease and flour 2 bread pans.
1. Cream together butter and brown sugar.
2. Add eggs and mix well.
3. Add mashed bananas
4. Combine flour, baking soda and salt in a bowl and stir together. Add to the creamed mixture and stir until all is moistened well. Don't beat out the lumps.
5. Pour mixture into bread pans. Bake in preheated oven for 50 to 65 minutes or until toothpick tested done.
6. Let cool in the pans for 10 minutes, then remove from pans and place on wire racks to cool completely.

I have a problem with banana because hot it tastes and smells like grass. I don't know, am I the only one who thinks that? You always have to wait for the pancakes or biscuits to cool down to eat properly. That's why I don't really like cooking with bananas.
