2 cups sugar 3 eggs 3 tablespoons vanilla 1 cup oil 2 cups zucchini, grated, skins and all 3 cups flour 1/4 teaspoon salt 1 teaspoon baking soda 1/4 teaspoon baking powder 1 cup chopped nuts (optional) - I used more like 1 1/2 cups of nuts 3 teaspoons cinnamon
Preheat oven to 350 degrees.
Combine all ingredients in a big bowl and stir well.
Pour batter into 2 greased bread/loaf pans.
Bake for 50 minutes to an hour. I took mine out at 55 mins but probably could have at 50 mins.
Some pointers:
I had a time getting the bread out of my pans, the sugars in the recipe do tend to make it want to stick a little. Next time I make it I will be either cutting a piece of parchment to lay in the bottoms of the pans OR will line the pans with aluminum foil, then spray the foil with nonstick spray (that way the bread will come out of the pans nicely and the foil should be easy to peel off).
